Materials

6 eggs (hard boiled and peeled)

2 beets (chopped)

½ cup vinegar (white or apple cider)

Half a cup of water

1/4 cup sugar

1 teaspoon of salt

9-10 cloves of garlic

1 carrot, sliced

Cut 1 onion into large pieces

3-4 dry chillies

2-3 Bombay chillies (optional)

1 tsp pickle masala (optional)

method

Combine beets, vinegar, water, sugar, salt, and pickling spices in a saucepan. Stir over medium heat until sugar dissolves. When the mixture boils, let it cool down.

While keeping the peeled hard-boiled eggs in a clean jar, mix together the carrots, onions, peppers and garlic. Now pour the cooled vinegar-beet mixture over the eggs in the jar, allowing them to completely submerge.

Close the jar well and keep it at room temperature or in the fridge.

Eggs should be soaked in the solution for at least 48 hours for best flavor. This pickle can be kept for up to a month. Golapi can eat this pickled egg salad or serve it as a 'garnish'.
